L-Glutamic acid (CAS Number: 56-86-0) is a food-grade amino acid widely used in the food and nutrition industries. Originating from China, it is used to create savoury and umami taste, as well as support key physiological functions in the human body.
L-Glutamic acid is available in a white powder form, with a fine, crystalline, free-flowing texture. It has a savoury taste with minimal odour and is highly soluble in water, enabling easy dispersion and consistent performance across various formulations.
L-Glutamic acid is an amino acid included in multiple biological processes. It functions as an excitatory neurotransmitter in the brain, supporting memory, learning, and cognitive function. It also functions as a precursor to the inhibitory neurotransmitter GABA, contributes to energy production, supports protein synthesis, assists in ammonia detoxification, and helps maintain gut health.
L-Glutamic acid is widely used across the food industry, particularly as a flavour enhancer. It is the primary component used to produce monosodium glutamate (MSG), which is known for enhancing umami taste in processed foods, sauces, seasonings, and restaurant dishes.
Typical dosage levels range from 2 to 15 grams per day, depending on the application and formulation purpose. A common intake is around 5 grams taken once or twice daily, especially in formulations targeting gut health or sports recovery.
