
Konjac Gum
Konjac Gum (CAS Number: 37220-17-0), also known as konjac glucomannan, is a natural, water-soluble dietary fibre extracted from the tuber of the Amorphophallus konjac plant. It is widely produced and supplied from regions such as China, Japan, and Korea, where it has been traditionally used in food applications for its exceptional thickening and gelling properties.
Konjac gum is available in powder form and has a white to cream colour, with a fine, free-flowing texture. It is odourless and tasteless, making it suitable for a wide range of food formulations without affecting the flavour. Konjac gum is highly soluble in water and is capable of absorbing up to 100 times its own weight, forming a viscous colloidal solution. While it can dissolve in cold and hot water, proper dispersion is required to prevent it from forming lumps due to its rapid hydration. Konjac gum is insoluble in ethanol. When heated with alkaline agents, it forms a stable and irreversible gel.
Konjac gum is primarily used as a thickener. It has a high viscosity, strong water-holding capacity, and pseudoplastic behaviour, which improves texture, elasticity, and moisture retention. It is commonly used in confectionery, puddings, dessert gels, and solid drinks. In processed meat and seafood products, konjac gum enhances binding, elasticity, and juiciness. In bakery and gluten-free products, it helps with structural integrity and dough elasticity. Konjac gum is also used in low-calorie and functional foods such as shiratki noodles due to its gel-forming ability and dietary fibre content.
Konjac gum is frequently used at low concentrations due to its high thickening efficiency, suggested dosage level range from 0.05% to 1%, depending on the application and formulation. It is often used in combination with other hydrocolloids such as carrageenan or xanthan gum to achieve optimal texture and stability.
