
Mustard Powder
Mustard powder (CAS Number: 84929-33-9) is a food-grade ingredient produced from finely ground mustard seeds and widely used in the food industry as a natural flavouring agent. It is sourced from Canada, with an authentic mustard aroma and a warm, pungent taste that enhances a wide range of food applications, particularly sauces and dressings.
Mustard powder is available in powder form with a vibrant yellow to pale yellow colour. It has a fine, dry, and free-flowing texture. In its dry state, the powder has minimal aroma. However, when mixed with cold water, natural enzymes are activated, releasing their distinctive, sharp, tangy flavour and mild heat. The taste is characteristically hot, slightly bitter, and complex, adding depth to formulations, though excessive use may overpower other flavours.
Mustard powder functions as a flavouring ingredient that provides concentrated pungency and tanginess. It also acts as a natural emulsifier, helping to bind oil and water phases in sauces and dressings such as mayonnaise and vinaigrettes. Due to its dry form, it has a longer shelf life compared to prepared mustard, making it a practical and versatile ingredient for industrial and culinary use.
Mustard powder is commonly used in the food industry for the production of sauces, salad dressings, marinades, and processed meat products. It is also suitable for seasoning applications to create a bold mustard note. When mixed with liquids, the powder does not fully dissolve but disperses to form thick suspensions or pastes, affecting the flavour and texture of the product. The recommended dosage is approximately 2-5 grams per day.
