
Yeast Extract
Yeast extract (CAS Number: 8013-01-2) is a food-grade flavouring ingredient obtained from yeast through a controlled autolysis process, in which yeast cells are broken down to release their soluble components. Sourced from China, this ingredient is widely used in the food industry for its ability to enhance savoury and umami taste profiles while supporting clean-label and salt-reduction formulations.
Yeast extract is available in powder form with a light brown to beige colour. It has a fine, free-flowing texture and a characteristic savoury, yeasty, and umami aroma. When dissolved, it forms a clear to slightly hazy yellowish solution. Yeast extract is highly soluble in water, with typical solubility levels ranging from approximately 35-410 g/L depending on the product grade. It is insoluble in alcohol and ether and can dissolve in both cold and warm water, although heat is commonly used during production to enhance solubility.
Yeast extract functions as a natural flavouring agent that creates a rich umami taste. It is rich in amino acids, peptides, nucleotides (such as GMP and IMP), and polypeptides, which contribute to depth and complexity in flavour. Yeast extract also supports salt reduction by intensifying savoury notes without compromising taste.
Yeast extract is widely used across various food industry sectors, including soups, sauces, seasonings, meat products, seafood processing, frozen foods, cured foods, snacks, convenience foods, and nourishing liquids. It enriches taste and mouthfeel while enhancing savoury flavour complexity. Yeast extract can boost flavour without the need for added MSG.
The typical dosage of Yeast Extract in food applications is approximately 1%, depending on the desired flavour intensity and formulation requirements.

Proper ventilation in the storage area is essential to prevent moisture buildup and ensure long-term product life.
