Caramel colour class IV (E150d) (CAS Number: 8028-89-5), also known as sulfite-ammonia caramel, is a food-grade colouring ingredient used to add rich brown to dark brown in food and beverage applications. This type of caramel colour is produced using sulfite and ammonium compounds, creating a highly stable and versatile colouring solution. Originating from China, it is one of the most widely used caramel colour classes in the global food industry.

Caramel colour class IV is available in both powder and liquid forms to support different formulation needs. It has a deep dark-brown appearance with a very mild aroma and flavour, enhancing product colour without affecting the taste. The ingredient mixes easily with water and remains stable in alcohol, tannin-rich, and acidic products, making it suitable for beverages and sauces.

It is also commonly applied in confectionery, bakery products, dairy items, desserts, chocolate syrups, coffee-based products, sauces, gravies, soups, marinades, seasoning blends, meat rubs, cocoa extenders, vinegars, and distilled alcoholic beverages. Its stability in acid-rich and alcohol-containing systems allows for consistent colour performance throughout processing and shelf life.

According to JECFA, the acceptable daily intake (ADI) for caramel colour class IV is 0-150 mg/kg body weight, calculated on a solids basis. Usage levels in food products are adjusted according to formulation requirements and applicable regulatory standards.
