
Gum Arabic
Gum Arabic (CAS Number: 9000-01-5), also known as acacia gum, is a natural resin harvested from the sap of various species of acacia trees, specifically Acacia senegal and Acacia seyal. These trees are found in regions of Africa, mostly in Sudan and parts of Asia. The resin obtained from the cracks of the tree bark is processed for industrial use.
Gum Arabic is available in powder form. It has a white-to-yellowish colour, with a smooth and powdery texture. An appropriate amount of gum arabic in food or beverage will not affect the taste or smell due to its neutral flavour and faint smell. Gum arabic has a high solubility, reaching 50%. The powder can be easily dissolved in either hot or cold water, forming a stable solution even at a relatively high concentration, though it is insoluble in ethanol.
Gum Arabic is mostly used as a thickener, stabilizer, emulsifier, and coating agent glaze. It is widely found in beverages, sauces, dressings, candy and confections. Gum Arabic has the ability to stabilize water and oil mixtures, acting as a natural emulsifier. Also known for its use in the production of coatings, it can easily adhere to various surfaces. When dissolved in water, gum arabic has a relatively low viscosity, hence it does not significantly affect the texture of the products in which it is used. It is also newly discovered that gum arabic has prebiotic properties, promoting the growth of beneficial bacteria in the gut, therefore enhancing consumers’ digestive health. The dosage level of gum arabic ranges from 1% to 2%, depending on the formulation requirements.
Furthermore, gum arabic products are Halal and BPOM (Indonesian FDA) certified, often labelled as “Food Grade,” making them safe for consumption. Gum Arabic are packaged in bags. The powder must be stored in an airtight container in a cool and dry place (15°C-25°C) with relative humidity below 50%. Be sure to keep it away from direct sunlight, moisture, and heat to prevent clumping and extend shelf life. Gum Arabic powder kept in a tightly sealed and moisture-free environment can last up to several years.
