Curdlan

Curdland (CAS Number: 544724-00-4) is a food-grade polysaccharide classified as a linear β-(1,3)-glucan. It is produced through microbial fermentation, primarily using Alcaligenes species. Originally from Japan, Curdlaan is used in the food industry for its heat-induced gelling and firming capabilities.

Curdlan is available in a white coloured powder form, with a fine and free-flowing appearance. It is odourless and tasteless, allowing it to be incorporated into food products without affecting the flavour. Curdlan is insoluble in water and alcohol, but it can swell and disperse in water. When heated at temperatures between 55-65°C, it forms a thermo-reversible gel, while heating above 80°C creates a strong, heat-stable, and irreversible gel. Curdlan is soluble in alkaline solutions and specific organic solvents such as dimethyl sulfoxide (DMSO).

Curdlan is primarily a thickener, stabilizer, firming agent, and gelling agent. It has the ability to form heat-resistant gels, improve hardness and elasticity, and retain moisture in food systems. Curdlan gels have a good freeze-thaw stability and high water-holding capacity, making them suitable for heat-processed and frozen foods. Curdlan can also form a micro-gel structure that mimics animal fat, making it effective as a fat replacer in reduced-fat and plant-based products.

Curdlan is widely used in processed meat, surimi, and flour-based products. In meat and seafood products, it enhances elasticity, bite, and juiciness while improving shape retention and yield. In noodles and pasta, it increases firmness and elasticity while reducing cooking loss. Curdlan is also used in dairy and confectionery to provide a smooth and stable texture, while in baked goods, it is used to improve structure and reduce oil absorption.

Curdlan is typically used at low concentrations depending on the application and desired texture. The dosage is adjusted based on formulation requirements, ranging from 0.1% to 1%, and is often optimized in combination with other hydrocolloids or stabilizers.

Curdlan is packaged in bags and should be stored in a cool, dry, and well-ventilated place. Containers should be kept tightly closed and protected from moisture and direct sunlight to maintain product stability and shelf life.
