
Acesulfame K
Acesulfame K (CAS Number: 55589-62-3), also known as Acesulfame Potassium, is a high-intensity, zero-calorie sweetener widely used in the food and beverage industry. It is classified as a good-grade sweetener and has a strong sweetness, good stability, and a clean taste profile. Acesulfame K originated in Germany and is commonly used as a sugar substitute in a variety of food products.
Acesulfame K is available in powder form with a white to off-white colour. The texture is fine crystalline powder or crystals. It is odourless and has a clean, sweet taste without adding calories. Acesulfame K is freely soluble in water, making it suitable for liquid applications, but it is only slightly soluble in ethanol. Due to its high solubility and stability, its performance is stable across different processing conditions.
Acesulfame K functions as a sweetener with a sweetness intensity approximately 150-200 times greater than sugar (sucrose). It provides sweetness without adding calories, making it suitable for reduced-sugar and sugar-free formulations. Its high heat and pH stability allow it to retain sweetness during cooking, baking, and pasteurisation. It is often blended with other sweeteners to improve taste balance and reduce aftertaste.
Acesulfame K is used in various industry sectors. In beverages, it is commonly used in diet soft drinks, flavoured waters, energy drinks, and fruit-based beverages. In dairy and dessert products, it is used in yoghurt, ice cream, puddings, and gelatin-based desserts. Its heat stability makes it suitable for baked goods. Acesulfame K is also used in confectionery products such as chewing gums, candies, jellies, and tabletop sweeteners.
The acceptable daily intake for Acesulfame K is 15 mg per kg of body weight. Dosage levels in food products are adjusted according to formulation requirements and applicable regulatory guidelines.
